A long time ago, at a welcome banquet at the start of a year I spent teaching in China, I had one bite of sea slug. Only one. The other foreigners I knew there all suspected that sea slugs ended up on our banquet tables so often because none of us would eat them and so our Chinese hosts could enjoy their delicacy at institutional expense.
